First take the dried apricots and dice in to small 1cm pieces and set aside.
Next take all the ingredients except the dried fruit and mix together in a bowl.
Once mixed, line a baking tray with greaseproof paper and evenly spread out the oat mix.
Bake in the oven for 10 minutes then mix gently, return to the oven for a further 5 minutes.
Remove tray from the oven and sprinkle over the dried fruit then return to the oven for another 5 minutes.
After a total of 20 minutes in the oven the granola should look a lovely golden brown colour, at this point remove from the oven and leave to fully cool.
Once fully cool crumble down the granola in to slightly small pieces ready to eat.
The granola can be eaten with yoghurt and fresh berries or alternatively try with warm almond milk and a sprinkle of cinnamon for a truly wintery breakfast.

50g sunflower seeds
50g pumpkin seeds
50g flaked almonds
60g dried apricots
30g dried cranberries
