Firstly, place a piece of foil followed by a same sized piece of non-stick baking paper on to a baking tray.
Next, mix the sesame oil, garlic, chili, lime juice, zest, soy sauce and ginger in a bowl.
Place the salmon in the middle of the baking tray and drizzle over the dressing.
Cut the pak choi into quarters and place around the salmon, wrap the salmon in the foil and baking paper and cook in the over for around 20 minutes.
Remove the salmon from the oven and leave to stand of 2 minutes.
Flake off the warm salmon and serve with a simple noodle stir fry or with a refreshing salad.
