SS GFS Boxing Day Muffins



  1. Pre heat the oven to 180 (gas mark 4)
  2. Whisk the egg and buttermilk together.
  3. Sieve the flour into a food mixer bowl, add the baking powder, mixed spice and sugar.
  4. Crumble in the Christmas pudding. Start the mixer and beat slowly while adding the milk mixture immediately followed by the melted butter and spirit and beat slowly. You want a lumpy mixture so don’t overbeat just gently stir. It’s fine to have traces of dry mixture.
  5. Scoop the mix into muffin cases, you want to fill them to almost full.
  6. Bake in the oven for 25 minutes. Sprinkle with icing sugar and serve

  • 1 egg

  • 120mls buttermilk

  • 30g butter, melted

  • 2tbsp Christmas spirit, such as brandy or whiskey

  • 130g of leftover Christmas pudding

  • 130g plain flour

  • 1tsp baking powder

  • 1tsp mixed spice

  • 80g caster sugar

  • Icing sugar to dust
