Skate Wing, tomatoes & Mustard Butter



  1. Take the skin off the skate wings and bone the fillets
  2. Melt 1oz butter with oil and heat gently
  3. Mix the flour and English mustard and season
  4. Dip the boned skate wings into the mixture and shake off excess
  5. Cook quickly one side to a golden colour, turn over, cook then take out and drain, keep warm
  6. Throw away excess fat, add shallots and white wine
  7. Add double cream and reduce
  8. Beat in butter and add grain mustard
  9. Season, add lemon juice, tomatoes and dill sprigs
  10. Put skate on plates, spoon sauce over and around and serve

  • Splash oil

  • 1tbsp white wine

  • 2tbsp grain mustard

  • 1 chopped shallot

  • 1tbsp double cream

  • 4oz butter

  • 1tbsp dill sprigs

  • 2 tomatoes, concasse

  • Salt & pepper

  • ½ lemon
