Sarah Christie's Cornflake Chicken


It’s probably more important that ever to be aware of what is in your families’ food. The problem is my family love fast food, which I am sure is a common factor with most teens. 

And whilst this doesn't hurt once in a while I really like to keep a healthy balance and know what my family is eating.

A friend recently gave me the recipe for homemade pizza; it was something I had never tried before, I just assumed it would be difficult to make. When in fact pizza is super easy to make and has become a firm favourite in the Christie household for a weekend treat. 

This got me thinking, there must be other recipes that mimic fast food, but are much healthier alternatives? That is when I came up with Cornflake chicken. It was actually a bit of a mistake as the recipe I had seen had been rice Krispie chicken. 

I thought I had memorised the recipe and head out shopping for ingredients but bought cornflakes instead of rice Krispies.

Some mistakes are meant to be aren't they? So when I realised my error I decided to go with and give it a go. And wow, the boys love this recipe. In fact they would eat it every day if I let them. Cornflake chicken really does taste like a treat, and is so quick and easy to rustle up, making it the perfect healthy midweek family meal. And is great served with homemade wedges and coleslaw.

You will need for 4
4 chicken breasts
2 eggs
Flour, enough to coat the chicken
150g cornflakes
80g golden breadcrumbs
Salt & pepper to season
1 heaped tsp. Schwartz perfect shake chicken herb and spice blend

Cut the chicken into strips
Put the cornflakes in a freezer bag and crush with a rolling pin. (Not too fine)
Mix in the breadcrumbs, salt, pepper and seasoning.
Whisk the egg to blend
Roll the chicken in the egg then flour then egg again, before rolling in the cornflake mixture and placing on a baking tray.
Cook at 180c or gas mark for 23 minutes.
I generally split one to check it is thoroughly cooked before serving with home made wedges and coleslaw.
