Loaded Nachos with Black Turtle Beans & Avocado

Method

Take a baking tray and cover with baking paper, next, place the tortilla chips on top followed by the cheese. 

Bake in the oven for 5 minutes until the cheese is well melted

To Serve

Remove the tortilla chips from the oven and scatter over all the ingredients except for the coriander and the sour cream. 

Finish the nachos with the coriander sprinkled on top and 2 large heaped spoons of sour cream. 

Serve with a tomato, lime and coriander salsa or a bowl of hot chili.

  • 1 Packet of tortilla chips

  • 150g Mixed cheddar and mozzarella cheese

  • ½ Red onion finely diced

  • 50g Cooked black turtle beans

  • 12 Cherry tomatoes quartered

  • 2tbsp Heaped sour cream

  • 4 Sprigs coriander chopped

  • 1 Avocado diced

  • 25g Pickled jalapenos
