Why not use some stale bread to make the breadcrumbs for homemade bread sauce this year?
1. Take your stale bread and place into a food processor to blitz into crumbs, if it is too moist to blitz, but too stale to eat, put into an oven at 140°C for half an hour or toast in a toaster/grill.
2. Put 600ml of milk into a pan with 1 chopped onion, 2 cloves of garlic, 5 cloves and a bay leaf.
3. Simmer for 20 minutes before straining out the onion, herbs and spices. Put the milk back onto the heat and add the breadcrumbs (around 100g), simmering for another 3-4 minutes.
4. Add a dash of cream, salt and pepper.
This can be served straight away or kept in the fridge for up to three days and heated up in the microwave or on the hob when needed.
