Grilled Halloumi Bowl with Courgetti, Avocado, Pumpkin Seeds & Harissa Dressing

Method

Courgetti mix

For the courgetti mix, simply finely chop the mint and mix with the courgetti.

Finally add 10g of olive oil and a little sea salt.

Harissa Dressing

For the dressing, mix the harissa paste with the lime juice and 40g of olive oil. Set aside for later.

To Serve

Heat a griddle or non-stick frying pan and sear the sliced halloumi on both sides until golden brown leave in the pan to stay warm.

In your serving bowl, firstly place some of the spinach followed by courgetti, diced avocado and dried blueberries.

Drizzle over some of the harissa dressing and finish the bowl with croutons and pumpkin seeds

  • 50g Olive oil

  • 1 whole avocado diced

  • 3 sprigs Mint

  • 20g Pumpkin seeds

  • 30g Ciabatta croutons

  • 40g Harissa paste

  • 1 Lime juiced

  • 150g Courgetti noodles

  • 45g Spinach

  • 25g Dried Blueberries

  • 150g Sliced halloumi

  • Pinch of Maldon sea salt
