Falafel Burgers with Sweet Potato Fries

Method

These healthy, vegan patties are an all-round winner, even for meat-eaters! Easy to make and delicious for those little tums too.

Method

  1. Preheat the oven to 220°C.
  2. For the fries, line a large baking tray with parchment paper then lightly grease. Set aside.
  3. Rinse your sweet potato fries then blot to dry. Once dried, add to a bowl.
  4. Add in the oil and toss to ensure all the potatoes are coated.
  5. In a small bowl, mix together the cornflour, garlic powder, salt and pepper. Sprinkle over the fries, until fully coated and the oil has absorbed the cornflour.
  6. Lay out the fries on the baking tray in one single layer. Bake for 15 minutes then flip to ensure they cook on all sides. Return to the oven for 10 more minutes.
  7. For the burgers, drain, rinse then dry the chickpeas. Add them to a food processor and pulse until you get a coarse crumb.
  8. Next, add the onion, garlic, spices, parsley and flour then pulse until fully combined.
  9. Get the kids involved and use your hands to create 4 patties that are about 10cm wide and 2cm thick.
  10. In a large frying pan, heat the oil and fry the patties each side for 2-3 minutes, until golden brown.
  11. To assemble, lightly toast the burger buns and add a layer of hummus, lettuce and one patty between the bread. Serve with the fries and tuck in!

  • 250g canned chickpeas

  • 1 onion, chopped

  • 2 garlic cloves, minced

  • 2 tsp ground cumin

  • 2 tsp ground coriander

  • 2 handfuls fresh parsley, chopped

  • 2 tbsp plain flour

  • 2 tbsp vegetable oil

  • 100g red pepper hummus

  • 4 burger buns, halved

  • Lettuce, to serve

  • For the Sweet Potato Fries:

  • 450g sweet potatoes, peeled and cut into fries

  • 2 tbsp olive oil

  • 2 tsp cornflour

  • 0.5 tsp garlic powder

  • Salt and pepper, to taste
