Easy Kids Fajitas

Method

Let the kids get stuck in and be part of the cooking. Introducing children to the kitchen early is a fantastic way to let them express their creativity and encourages them to get involved in family activities. This is great for children 4 years +.

  1. First, make the salsa. Add all the ingredients in a bowl and mix well, checking the seasoning then put to one side for later.
  2. In a small bowl mix the fajita marinade together and keep to one side for cooking.
  3. Warm two frying pans on a medium heat with a little oil.
  4. Pop the sliced chicken breast into one and start to cook for a couple of minutes.
  5. In the other pan, add the peppers and onions and cook until soft.
  6. Add the marinade mix to the chicken, stirring well to coat the chicken. Cook for another 7 minutes.
  7. Now warm the tortillas as per instructions on the packet.
  8. Lay everything out for the little ones to build their fajitas. Add the chicken, peppers and onion, homemade easy salsa, a little cheese and top with sour cream and guacamole. Yummy!

Serves: 4

  • To make the fajita marinade:

  • 2 tbsp of tomato ketchup

  • 1 tsp of balsamic vinegar (use red or white vinegar if you don’t have balsamic)

  • 1/2 tsp of sugar

  • 1 tsp of mixed dried herbs

  • A dash of tabasco (optional)

  • For the fajitas:

  • 2 chicken breasts sliced

  • 1 of each pepper thinly sliced

  • 1 red onion thinly sliced

  • 4 tortillas

  • Sour cream, guacamole and grated cheese to serve

  • For the salsa:

  • 1 large tomato diced

  • 2 spring onions thinly sliced

  • 1 tbsp of chopped coriander

  • A squeeze of lime

  • Salt and pepper
