To make the fajita marinade:
2 tbsp of tomato ketchup
1 tsp of balsamic vinegar (use red or white vinegar if you don’t have balsamic)
1/2 tsp of sugar
1 tsp of mixed dried herbs
A dash of tabasco (optional)
For the fajitas:
2 chicken breasts sliced
1 of each pepper thinly sliced
1 red onion thinly sliced
4 tortillas
Sour cream, guacamole and grated cheese to serve
For the salsa:
1 large tomato diced
2 spring onions thinly sliced
1 tbsp of chopped coriander
A squeeze of lime
Salt and pepper
