Easy Cupcakes

Method

Try this simple recipe for delicious and easy cupcakes. Get creative and decorate them any way you like – we love using buttercream swirls with colourful sprinkles.

  1. Pre-heat the oven to 180°C.
  2. Prepare a muffin tin lined with cupcake cases.
  3. Add all the ingredients into a large bowl and whisk together with an electric hand mixer until smooth.
  4. Fill each case with the mixture until half full.
  5. Pop in the oven and bake for 20 minutes. Leave to cool thoroughly before icing.
  6. Swirl the buttercream over the top of each cupcake – you can also try adding different food colouring.
  7. Decorate with sprinkles or chocolate chips.

  • 125g self-raising flour

  • 125g caster sugar

  • 125 margarine or butter

  • 1 tsp baking powder

  • 2 eggs

  • A dash of vanilla essence

  • For decorating:

  • Buttercream

  • Food Colouring

  • Sprinkles or chocolate chips
