Connie's Gingerbread Men


You will need:

- Gingerbread man cutter

- Rolling pin

- Electric whisk

- Two lined baking trays


Making the gingerbread men

  • Sift together the flour, soda, ginger, cinnamon, all spice and salt into a medium size bowl. 
  • In a separate bowl, mix together the butter and sugar until light and fluffy.  Then using an electric mixer (on high speed) beat in the egg and golden syrup. Now, add the flour mixture, 4 tbsp at a time (with the mixer on low speed).  Bring the mixture together with your hands to form a firm dough.  
  • Tip the dough out onto a lightly floured work surface and separate into three separate balls.  Wrap each ball in Clingfilm and put in the fridge for about 30 minutes. 
  • Preheat your oven to 180 C and line two large baking trays with greaseproof paper. 
  • Lightly dust the work surface with flour and roll out the dough to a 0.5 cm thickness.  
  • Dip the gingerbread men cutter into flour and then cut out your figures from the dough.  Transfer them to the lined baking trays (remember that the dough will spread slightly- so leave some space between each figure).
  • Bake in the oven for 10-12 minutes.
  • Leave to cool on a wire rack.

  • A pinch of salt

  • 125g unsalted butter (softened)

  • 175g dark brown sugar

  • 1 egg

  • 4 tbsp golden syrup
