Cut a large square of grease proof baking paper and lay on a deep baking tray.
Prepare the courgette and chili by slicing as thinly as possible and set aside.
On the baking paper lay first the spinach, then the basil and then the chili. Once layered up drizzle half of the oil and lemon juice, followed by a sprinkle of salt.
Next place the cod on top, then layer the courgette similar to the scales of a fish. After, drizzle the remaining oil, salt and lemon juice over the top.
Carefully fold the baking paper over the top and into a parcel and place in the oven.
Serve the cod in the paper on a plate with a crunchy mixed grain and pulse salad or hot buttered new potatoes.

5g Red Chilli
10g Lemon Juice (1/4 wedge of lemon juiced approx)
5 Leaves Basil
20g Olive oil
Pinch of sea salt and cracked black pepper
