Sieve the flour, caster sugar, salt and baking powder into a bowl and then mix all remaining ingredients together until you have a smooth batter.
Place the bacon on to a baking paper lined tray and bake in the oven.
Whilst the bacon is cooking start to fry your pancakes.
Heat a medium frying pan and add a small amount of oil, pour an even coating of batter into the pan and leave until you start to see bubbles forming on the surface.
At this point sprinkle over a few blueberries and flip to finish the cooking.
Repeat the process until all pancakes are cooked.
Layer up the finished pancakes and sprinkle the remaining blueberries followed by crispy bacon and finally a drizzle of maple syrup.
