Sausage & Onion Crumble

Method

METHOD

  1.  Heat the oil
  2. Thinly shred the onion and add to oil, brown gently and cook
  3. Add the crushed garlic
  4. Cut sausages into 6 pieces each and add to the onions
  5. Add crushed garlic and season
  6. Cook for 10 minutes
  7. Take off and leave to cool
  8. When cool, add the peas and pour into an ovenproof dish
  9. Cut the brioche into ¼ “ dice
  10. Cut the bacon into fine dice
  11. Melt the butter and add bacon
  12. Colour lightly
  13. Add brioche to butter and start to colour
  14. Mix in hazelnuts and parsley
  15. Pour over the sausage stew in dish
  16. Bake in the oven 160 c for 20 minutes
  17. Turn up the oven to colour the top of the brioche
  18. Take out and serve

  • 12 sausages, cooked

  • 2 onions

  • 1 tin tomatoes

  • 1 clove garlic

  • 8oz frozen peas

  • 1tbsp oil

  • Salt & pepper

  • 8oz stale brioche or bread

  • 4oz butter

  • 2oz hazelnuts, finely chopped

  • 2 slices bacon

  • 1tbsp chopped parsley
