French Toast With Blackberry

Method

Peel and core the apples and cut into 12 wedges each 

Put into a pan with the sugar, butter and apple juice 

Cook gently for approx. 6 minutes, the apples will just be starting to become tender 

Pull to one side and gently add the blackberries and keep warm 

Meanwhile put the brioche slices in a tray 

Mix the cream, sugar, yolks and eggs and pour over the brioche, allow to soak for 5 minutes, turning after 3 minutes 

Melt the butter and sugar together 

Drain the brioche and cook in the caramelising mixture, turn over then take out and put to one side 

Heap the fruit on top and decorate with a quenelle of mascarpone

  • 4 thick slices brioche

  • 4oz sugar

  • 1oz butter

  • ½ pt. double cream

  • 1oz sugar

  • 2 egg yolks

  • 1 egg

  • 2 eating apples

  • 16 largish blackberries

  • 2tbsp sugar

  • 1tbsp butter

  • 1tbsp apple juice

  • 6oz mascarpone
