Cheesey Chili Bubble & Squeak with a Fried Egg

Method

METHOD 

  1.  Scoop out the flesh of the potato into a bowl
  2. Using shredded cabbage, add to the potato
  3. Finely chop the chilli and gently cook in a splash of oil, then add to the bowl
  4. Add grated cheese, season and stir
  5. Heat a splash of oil in a 4” frying pan
  6. Add a quarter of the mix and push down to shape
  7. If possible do this in 3 more pans
  8. Colour the base then flip over
  9. Put in the oven 180 c for about 10 minutes
  10. Lay on plate
  11. Fry the eggs in butter and lay on top to serve

  • 1 ¼ lb. of cooked baked potato

  • 8oz cooked savoy cabbage

  • 4oz grated mature cheddar

  • 4 eggs

  • Chilli as required

  • 2tbsp ground nut oil

  • 2oz butter

  • Salt & pepper
