Broccoli & Roast Chicken Stir Fry

Method

Mix the egg white, corn flour and salt

Dip the chicken pieces in and coat well

Heat the oil in a wok

Fry the chicken until crisp then take out with a slotted spoon and put into paper to drain

Keep just 1tbsp of oil in the wok and reheat

Add ginger, garlic and chilli and fry for 20 seconds

Add red pepper the chicken pieces and stir fry for 1 minute

Add chicken stock and soy sauce and bring to the boil

Add broccoli and spring onion and heat

Check seasoning and serve

  • 1 egg white

  • 1tbsp corn flour

  • Pinch sea salt

  • 1lb strips of cooked roasted chicken

  • 10oz ground nut oil

  • 1oz grated ginger

  • 1oz grated garlic

  • A little chopped chilli

  • 1 red pepper, sliced

  • 4 large spring onions, shredded

  • 8oz cooked broccoli

  • 2tbsp chicken stock

  • 3tbsp light soy sauce

  • Salt & pepper
